Can you pack it up with fly attached ?

There would not be anything stopping you from leaving the fly on and packing up. A couple of things to be careful of though, just make sure there is no moisuture in the fly to avoid mould and go slow the first couple of times until you get the hang of it - you don't want to damage the fly.

Was looking to get one of these with a Fatmat 750 mattress, how do you end up for foot room with 15cm mattress. Could I use a Fatmat light only 10cm but I realise it is a bit narrower, would this matter ?

You still get a decent amount of foot room with the Fatmat 750 you'll only be up 5cm higher than the Fatmat Lite. They are the same length but you'd be better off with the 750 as it is closer to the width of the stretcher than the Lite. Wouldn't be too much difference but you'd have some gap with the Lite Fatmat.

Yep! That's correct. Because the block-out material they are using is also the same one they use in their family tents, Oztrail do provide a waterhead rating/waterproof guarantee with this stretcher, which they don't do with the standard Easy Fold Stretcher Tent. Hope that helps!
