You can push the valve into place, you only need to twist the middle valve when changing over from inflate to deflate then push it in to secure. There is a handy video here that explains the process at 6mins - https://www.youtube.com/watch?v=jV_NJfQUSSs

Unfortunately not without potentially causing damage to the internal foam structures of the mat, as they're not designed to be folded.
Your best bet would be to remove the mat and roll separately, or look at a non-foam inflatable hiking mat alternative that can be easily folded.

Packed:

Regular - 26L x 20.4W cm

Large - 33L x 21.6W cm

Rectangular Wide - 34L x 20.4W cm

Rectangular Large - 34L x 21.6W cm

In use:

Regular - 183L x 51W cm

Large - 198L x 64W cm

Rectangular Wide - 183L x 64W cm

Rectangular Large - 201L x 64W cm

All the above are 7.5cm thick when in use

The thickness comes down to comfort and what you're prepared to sleep on. 
I personally wouldn't be getting anything thinner than 7-8cm because I'm not keen on feeling the ground through my mat. I toss & turn a lot in my sleep which makes that more of an issue.
If you're mostly a front or back sleeper, and doesnt move alot, the 3.8cm would be ok.  The firmness of the mat comes down to the user and how much you do or don't want to pump it up.  The other thing to consider is the R-Value of the mat, which tends to be lower in thinner mattresses.
Any sleeping bags tested to ASTM standards are tested on an R-Value 4 mat.
If your mat is less than this, your rated sleeping bag performance will likely be lower than stated.

It's a different fabric, but has a similar look and feel, definitely not noisy in a crinkly way like some of their hiking mats are known to be.
I think this is an excellent alternative that will save you some pennies, you won't be disappointed.
