the example listed for one bin as fridge and one as freezer and drawing 2.2 Ah/h is that per bin or total draw for both?

There's quite a lot of variables in power consumption based on a range of factors eg. ambient temps, position of fridge, how often you're opening it, etc. Basically the power consumption details provided in the specifications are a baseline to work from. Obviously these are with 1x fridge, 1x freezer compartment, so if you're running 2x fridges instead, you're obviously looking at abit less. On average specs for running fridges of most brands at 4ºc fridge temps draws around 1-2Ah. If you only get the fridge out and use it for trips we 100% recommend bringing it inside & plugging into 240v to get to the required temp before transferring to the car & over to 12v. will draw less power on maintenance than trying to cool down to 3-4ºc from scratch.
